Ingredients: 6 big eggs 1 cup shredded cheddar or Monterey Jack Cup chopped spinach (fresh or frozen, thawed and drained) 6 big flour tortillas Salt and pepper to taste Additional options: cooked shredded bacon or sausage, diced bell peppers, onions, tomatoes, spicy sauce, salsa 

Instructions: Scramble eggs in a large skillet over medium heat until done yet moist. Add salt and pepper to taste. After cooking the eggs, remove the skillet from the heat and toss in the shredded cheese until melted and evenly distributed. 

Put chopped spinach in the skillet with the eggs and cheese. Wilt the spinach and mix it with the eggs and cheese. Place a flour tortilla on a clean surface. Spoon the egg, cheese, and spinach mixture into the tortilla's middle, leaving space around the edges. 

Add cooked crumbled bacon or sausage, diced bell peppers, onions, tomatoes, spicy sauce, or salsa to the egg mixture if preferred. Fold the tortilla sides over the filling and roll it tightly into a burrito. Repeat with remaining tortillas and fillings. 

Wrap each burrito in parchment paper or aluminum foil after assembly to keep it intact in the freezer. Put the wrapped burritos in a resealable plastic bag or airtight container and label them with the date before freezing. 

Reheat frozen: Unwrap a frozen burrito, leaving it loosely wrapped in parchment paper or foil. Heat the tortilla in the microwave for 1-2 minutes on high.
