Ingredients:For the couscous:– 1 cup couscou– 1 1/4 cups water or vegetable broth– 1 tablespoon olive oil– Salt to taste
For the curry dressing:– 1/4 cup plain yogurt or Greek yogurt– 2 tablespoons mayonnaise– 1 tablespoon curry powder– 1 tablespoon honey or maple syrup– 1 tablespoon lemon juice– Salt and pepper to taste
For the salad:– 1/2 cup diced cucumber– 1/2 cup diced bell pepper (any color)– 1/4 cup diced red onion– 1/4 cup raisins or dried cranberrie– 1/4 cup chopped fresh cilantro or parsley– 1/4 cup chopped roasted almonds or cashew
In a small saucepan, bring the water or vegetable broth to a boil. Stir in the olive oil and a pinch of salt. Remove from heat, add the couscous, cover, and let it sit for about 5 minutes, or until all the liquid is absorbed. Fluff the couscous with a fork and transfer it to a large mixing bowl to cool.
