Mendocino Farms Curried Couscous Recipe: Savoring the Spice

Ingredients: For the couscous: – 1 cup couscou – 1 1/4 cups water or vegetable broth – 1 tablespoon olive oil – Salt to taste

For the curry dressing: – 1/4 cup plain yogurt or Greek yogurt – 2 tablespoons mayonnaise – 1 tablespoon curry powder – 1 tablespoon honey or maple syrup – 1 tablespoon lemon juice – Salt and pepper to taste

For the salad: – 1/2 cup diced cucumber – 1/2 cup diced bell pepper (any color) – 1/4 cup diced red onion – 1/4 cup raisins or dried cranberrie – 1/4 cup chopped fresh cilantro or parsley – 1/4 cup chopped roasted almonds or cashew

 In a small saucepan, bring the water or vegetable broth to a boil. Stir in the olive oil and a pinch of salt. Remove from heat, add the couscous, cover, and let it sit for about 5 minutes, or until all the liquid is absorbed. Fluff the couscous with a fork and transfer it to a large mixing bowl to cool.

. In a separate bowl, whisk together the yogurt, mayonnaise, curry powder, honey or maple syrup, lemon juice, salt, and pepper to make the curry dressing.

 Once the couscous has cooled to room temperature, add the diced cucumber, bell pepper, red onion, raisins or dried cranberries, and chopped cilantro or parsley to the bowl. Toss gently to combin
