Ingredients: – 2 tablespoons olive oil – 1 onion, diced – 2 carrots, diced – 2 celery stalks, diced – 3 cloves garlic, minced

– 6 cups chicken broth – 2 cups cooked chicken, shredded or diced – 1 cup small pasta (such as ditalini or small shells) – 1 teaspoon dried thyme – 1 teaspoon dried oregano – Salt and pepper, to taste – Fresh parsley, chopped, for garnish – Grated Parmesan cheese, for serving (optional)

 In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and cook until softened, about 5-7 minutes.

 Add the minced garlic to the pot and cook for an additional minute, until fragrant.
